Grilled Pork Kebabs with Cucumber Sauce

This is a great summer recipe because it uses the grill and would be great with fresh cucumber from the garden!


Ingredients:
6 burrito-size flour tortillas, halved
¼ cup Extra Virgin Olive Oil
Salt & Pepper
1# pork loin cut into cubes
1 onion cut into wedges
1 tsp dried oregano
1 cup plain Greek-style yogurt
1 tsp dill
½ English cucumber, grated
Directions:
Toss pork and onions with 1 ½ tbsp olive oil, oregano, and season with salt and pepper. Allow to marinate 20 minutes until overnight. Thread on 4 skewers. Preheat grill to medium-high. Brush tortillas with 1 ½ tbsp of olive oil and sprinkle with salt. Toast on the grill until browned, about 5 minutes. Mash garlic and ½ tsp salt into paste. Whisk in yogurt, dill, and ¼ tsp pepper. Grill skewers until lightly charred and cooked through, approximately 8 -10 minutes. Serve with sauceand tortillas.
