Under $3.00 CHEAP Dinner - Stuffed Peppers


I picked 8 green peppers from the garden on Sunday, so tonight I made wonderful Stuffed Peppers with them. The total recipe ended us costing me less than $3 and could easily feed a family of four! Here is the recipe:

Ingredients:
8 green peppers (fresh from the garden)
1# ground beef (I got this on sale for $1.99/#)
1 onion, chopped
1 tomato, chopped
1/3 cup uncooked rice
3/4 cup of water
1/2 teaspoon oregano
1/2 teaspoon basil
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup cheddar cheese

Brown meet and onion and then drain. Add tomato, rice, water and spices and bring to boil. Simmer for 18-20 minutes. While simmering, cut peppers lengthwise and clean out the insides. Submerse peppers in boiling water for 3 minutes and then drain. Add cheese to beef mixture and fill peppers. Bake for 15 minutes at 375 and then top with extra cheddar!

  1. These look delicious! I always cut the tops off of the peppers and stuff them, but your way looks much easier to each when they're done. Thanks for sharing!
