Under $3.00 CHEAP Dinner - Stuffed Peppers

I picked 8 green peppers from the garden on Sunday, so tonight I made wonderful Stuffed Peppers with them. The total recipe ended us costing me less than $3 and could easily feed a family of four! Here is the recipe:

Ingredients:

8 green peppers (fresh from the garden)

1# ground beef (I got this on sale for $1.99/#)

1 onion, chopped

1 tomato, chopped

1/3 cup uncooked rice

3/4 cup of water

1/2 teaspoon oregano

1/2 teaspoon basil

1/4 teaspoon salt

1/4 teaspoon pepper

1/2 cup cheddar cheese

Brown meet and onion and then drain. Add tomato, rice, water and spices and bring to boil. Simmer for 18-20 minutes. While simmering, cut peppers lengthwise and clean out the insides. Submerse peppers in boiling water for 3 minutes and then drain. Add cheese to beef mixture and fill peppers. Bake for 15 minutes at 375 and then top with extra cheddar!

Ringing the Dinner Bell for the Week of July 5th

With 2 full-time working parents, it is too easy to fall into the rut of getting take-out or eating out after a long day at work. I have set a realistic goal for our family to eat a meal at home for at least 5 of the 7 days during the week. I am happy to report that we succeeded our goal this week!
