Blueberry Breakfast Cake


This breakfast cake is light, fluffy, ooey-gooey deliciousness!  I used frozen blueberries we had left over from picking last summer, but feel free to use fresh ones too!

Ingredients:
1/2 cup salted butter, softened
3/4 cup sugar
1 egg, room temperature
1 tsp vanilla
1/4 cup flour
1 3/4 cups Bisquick Mix
2 cups blueberries, fresh or frozen
1/2 cup buttermilk (or 1/2 cup milk with tsp of lemon juice)
1 Tbsp sugar for top

Directions:
1.  Preheat oven to 350F.
2.  Cream butter and sugar on low until light and fluffy.
3.  Add egg and vanilla.
4.  Add Bisquick slowly to butter/sugar mixture alternating with the buttermilk.
5.  Combine blueberries with flour.
6.  Fold in blueberries.
7.  Spray 8x8 pan with cooking spray.
8.  Spread batter into pan (it will be thick).
9.  Sprinkle top with remaining sugar.
10.  Bake for 40-45 minutes.
11.  Let stand for 15 minutes.

Peanut Butter Cereal Bars


These are fast, easy, and were a hit in my house!  Great for a quick breakfast or snack on the run.

Ingredients:
2 cups Quick Oats
1 1/2 cup Crisp Rice Cereal
3/4 cup creamy peanut butter
1/4 cup brown sugar
1/2 cup light corn syrup
1 tsp Vanilla Extract

Directions:
1.  Line a 8x8 pan with aluminum foil.
2.  In large bowl combine Quick Oats and Crisp Rice Cereal.
3.  In a microwave safe bowl, combine peanut butter, brown sugar, corn syrup, and Vanilla.  Microwave on high for 30 seconds.  Stir and then microwave for another 30 seconds and mix well.
4.  Pour peanut butter mixture over cereal and combine.
5.  Press mixture into foil-lined pan.  Allow to cool for 1 hour and then cut into bars.

Egg in the (Avocado) Hole


If you love avocados like I do, I really suggest you try this amazing (healthy) breakfast.  I also think it would make an really good item for a brunch, but it is a little labor intensive to make.

Ingredients:
1 avocado
2 large eggs
olive oil
salt & pepper
feta cheese

Directions:
1.  Heat olive oil in a nonstick skillet.
2  Slice avocado in half and remove pit and skin.
3.  Place avocado inside down on pan, sprinkle with salt and pepper, and allow to cook about 5 minutes on medium heat.
4.  Flip avocado halves over and crack an egg into the middle of each half.  Try hard to get the yoke in the middle.  Sprinkle with salt and pepper.  Add about a 1/4 cup of water to the pan and put a lid on it.  Turn the heat on high and allow the egg to cook for 3-5 minutes.
5.  Sprinkle feta cheese on top of egg along with salt and pepper.  Replace the lid on the pan to allow the cheese to melt.

Spinach Mushroom Omlet


The picture doesn't make it look very appealing, but if you love spinach and mushrooms, this one is for you!  I enjoyed this for dinner one night when we were having a "help yourself night".  No one in my family would eat this anyways, except me!

Ingredients:
2 eggs, beaten together
1/2 cup fresh mushrooms
1 tablespoon of olive oil
1 cup fresh spinach
salt and pepper

Directions:
Heat oil in skillet over medium-high heat.  Sauté mushrooms until tender.  Add spinach and cook down.  Pour eggs directly over the spinach and mushrooms.  Once cooked on one side, flip entire omelet and continue to cook until eggs are fully  cooked!  Salt and pepper to taste.  Enjoy!

I didn't add cheese, but I am sure it would be a great addition!

Corn Flake Muffins



This is an easy recipe and you most likely have everything on hand in your house.  I had some corn flakes to use up so I wanted to try it out.  The results?  They were delicious, even my toughest critic (my husband) said they were "really good"!  I will definitely be making more of these!

Ingredients:
1 1/2 cups white flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup white sugar
2 cups corn flakes, crushed
1 1/4 cup milk
1 egg
1/3 cup oil
1 teaspoon vanilla

Directions:
Preheat oven to 400.  Grease muffins cups or use paper liners.  Combine flour, baking powder, salt and sugar in one bowl.  In other bowl combine corn flakes and milk and let set 2 minutes.  After 2 minutes beat in egg, oil, and vanilla.  Slowly beat in dry ingredients until just mixed.  Pour into muffin pans and bake for 20 minutes.  Enjoy warm.

Next time I make these, I think I will add a little honey to the wet ingredients.

Egg in a Basket


My family is all about eggs lately!  We have been buying 36 at a time at Costco!  I love eggs and my 5 year old loves his eggs!  So we tried a new recipe today, that I am calling Egg in a Basket.  So before we had children, my husband and I spent a weekend at a Bed and Breakfast.  We had this amazing breakfast which (6 years later) I decided to re-create this morning!  All you need is an egg (I would recommend medium eggs or they will overflow), piece of bread (I used italian), butter, salt, pepper, some cooking spray, and a muffin pan!

Simply spray your muffin pan with cooking spray.  Take your bread and cut off the crust.  Butter both sides of the bread and then fit into the muffin pan to make a "basket".  Crack the egg inside the "basket".  Top with salt and pepper.  Bake for 10-15 minutes at 350F.  I cooked mine for 15 minutes since I like my yolks completely done (yeah I'm weird like that)!  Enjoy!
