Pizza Night - Basil Pesto Pizza

So homemade pizza night has become a fast tradition in our house.  I often wonder what took us so long to start doing this once a week.  I do have a special helper that loves to roll the dough, spread the sauce, sprinkle the cheese, and of course top with pepperoni!  We have to have pepperoni pizza because that is his and his Dad's favorite pizza!  He decided to make the smiley face as a surprise for Dad!



But this week, we made 2 pizzas, a boys' pizza (aka pepperoni) and a girls' pizza (okay that is only me).  I made a Basil Pesto pizza.  I had a jar of basil pesto waiting in my cupboard for awhile.  I used that as my sauce and then topped with fresh from the garden thinly sliced Roma tomatoes and topped with a four cheese Italian blend and sprinkled on some extra basil/


The result?  Absolutely delicious!  Even my normally "meats and potatoes" husband said, "it was pretty good".  I'll take that as a compliment from him.  We will definitely be making this one again!

New Credit Card Rules in Effective 08/22/10

More new rules from the Federal Reserve mean more new credit card protections for you. Here are some key changes you should expect from your credit card company beginning on August 22, 2010:


Reasonable Penalty Fees
Let's say you are late making your minimum payment.

Today: Your late payment fee may be as high as $39, and you likely pay the same fee whether you are late with a $20 minimum payment or a $100 minimum payment.

Under the new rules: Your credit card company cannot charge you a fee of more than $25 unless:
One of your last six payments was late, in which case your fee may be up to $35; or
Your credit card company can show that the costs it incurs as a result of late payments justify a higher fee.

In addition, your credit card company cannot charge a late payment fee that is greater than your minimum payment. So, if your minimum payment is $20, your late payment fee can't be more than $20. Similarly, if you exceed your credit limit by $5, you can't be charged an over-the-limit fee of more than $5.

Additional Fee Protections
No inactivity fees. Your credit card company can't charge you inactivity fees, such as fees for not using your card.

One-fee limit. Your credit card company can't charge you more than one fee for a single event or transaction that violates your cardholder agreement. For example, you cannot be charged more than one fee for a single late payment.

Explanation of Rate Increase

If your credit card company increases your card's Annual Percentage Rate (APR), it must tell you why.

Re-evaluation of recent rate increases
Today: Your credit card company can increase your card's APR with no obligation to re-evaluate your rate increase.

Under the new rules: If your credit card company increases your APR, it must re-evaluate that rate increase every six months. If appropriate, it must reduce your rate within 45 days after completing the evaluation.

This set of rules is the latest in a series of regulations that implement the Credit Card Accountability, Responsibility, and Disclosure Act (the Credit Card Act). For information on protections under the Federal Reserve's other credit card rules can be found here.

4 Smart Ways to Pay for College

It is never too late to save for college. Any money you save now for your children, will further reduce their expenses and loan they may have to take when they are actually attending college. Whether your child is in preschool or high school the time to start saving is NOW! I am a strong supporter of a college education. I believe that in today’s corporate America, a college degree is a must, just think what it may be 18 years from now! Here are the four best plans to save for college:


The 529 Plan
Every state offers at least one version of a 529 plan and you don’t need to live there to sign-up. Plans vary so visit SavingforCollege.com to compare your options. Most states offer tax breaks for the 529 contributions, but you need to choose your state’s plan to qualify. In Ohio, visit CollegeAdvantage.com.

Pros:
No annual contribution limit
Accounts can hold up to $380K (caps vary by state)
Anyone can add to the account
You can transfer the money to other children (or relatives) if one child decides not to attend or gets a scholarship

Cons:
Risk – you are investing in the stock market
You will have to pay penalties and taxes on the interest if it is NOT used for college expenses

Coverdell ESAs
Parents can contribute up to $2000 in these education savings accounts (ESAs) each year. The money grows tax-free until you withdraw it to pay for school expenses

Pros:
Lower fees and more investment options than 529 plans
You can use funds for K-12 expenses (supplies, uniforms, or tuition)

Cons:
Couples must earn less than $220K combined or $110K to be eligible
Congress has to vote to keep the current benefits or the contribution limit may drop to $500 per year and the K-12 expenses will no longer be covered

Roth IRAs
You can use funds in a Roth IRA before the age of 59 ½ to pay for your child’s education without penalty. You can invest $5000 per year if you are under 50 years old and $6000 per old if you are 50 or older

Pros:
Money grows tax-free
Funds can also pay for your retirement

Cons:
You should only use your Roth IRA money for college is you have retirement savings elsewhere
Couples must earn less than $177K combined or $120K to be eligible

Savings Accounts, Money Markets, CDs and Bonds
Just go to the bank or online and open these accounts or buy CDs or Savings Bonds

Pros:
Total flexibility, if your child does not go to college you will not have to pay any penalties or fees
Minimal risk

Cons:
Low returns on your money
You must pay income taxes on your earnings

Garden Update

Well it is August and I got some more cherry tomatoes this week!  I also picked 2 regular tomatoes and some jalepenos.  I just made up some homemade salsa and cannot wait to eat it this weekend.  Check out my sunflowers.  That is all ONE plant.  Kind of strange, I have never seen that before!



Do you see my corn??  Yes I have corn growing!  This was an experiement this year and so far it is working.  I was able to spot multiple ears of corn growing.  We will see if we get enough to make a meal of it.  If so, we are going to expand the corn patch next year!

Menu Plan Monday – Week of 08/02/10

I cannot believe how fast our summer is flying by, it seems like it was just June 1. On the upside, I love some traditional “winter” recipes in our house such as chili, stew, pot roast, and meatloaf. Hence is why you see meatloaf on our list this week, my husband specially asked if I could make one! If you noticed, we have reduced our eating out to only one time per week, partly to save more money and partly due to a 20 month old that does not behave well in restaurants!


Monday – Shake-n-Bake Pork Chops
Tuesday – Spaghetti
Wednesday – Steak Fajitas
Thursday – Chicken Enchiladas (recipe to follow)
Friday – Meatloaf
Saturday – Eat Out
Sunday – Steaks and Potatoes on the Grill

Cellfire & Giant Eagle

If you were not aware, Giant Eagle now participates with Cellfire. At Cellfire you can register your Giant Eagle Advantage card and load electronic coupons onto your card. The coupons at this time are limited however there are some on the site. I normally load all available coupons onto my card just in case! I just had my first experience using this service. Once the cashier totals your order, the Cellfire coupons are automatically deducted. I had a $0.75 off coupon for Multigrain Cheerios that I was able to use, which in fact made my cereal purchase an even better deal!


Multigrain Cheerios – 4 for $10 ($2.50)
Cellfire Coupon - $0.75
Mfg Coupon - $1/2 GM Cereals
Final price for one box was - $1.25!

Electronic coupons are also available online from Shortcuts! So my advice is, “load them all up”!

Rebates - Is it worth my time?

My answer is - YES!  This is what I got in my mailbox yesterday, a $10 check from Kraft from their buy $30 get $10 back and a $7.99 from Schick, which equates to about a $4 money maker!  When I bought the razor it was $7.99, but I used a $4 coupon.  I still got the entire $7.99 back as a rebate check!


In order to stay organized, as soon as I purchase the items on a rebate, I fill out the form, clip the UPC(s) and mail them with the reciept as soon as I get home from the store.  This way I do not forget them.  I think it is totally worth it!  6-8 weeks later, instant money in my mailbox!
