The Watch Project
So I have worn a watch for so long, I cannot remember being without one. I am always the one who has the suntan line around my watch because I never take it off, except before I go to bed. In the past, when I have forgotten my watch, I find myself constantly looking down at my wrist. Last week, the battery on my watch died, the clasp is very week and I decided it was best to buy a new one. Then I thought, do I really need a watch? This began the "Watch Project"
I sit in an office at the computer 40 hours a week. There is a clock on my computer, why do I need a watch at work? I drive in the car for at least 20 hours per week and on the dashboard is a clock. I never leave home without my Blackberry and what does my Blackberry have? Of course, a clock set to the exact time! There are clocks all over my house, on the DVR, above the fireplace, on the microwave, the stove, above the sink, and next to my bed. Why do I need a watch?
So I have been without my watch for about a week now and guess what? I do not miss it. Nor do I find myself staring blankly down at my wrist. So I will continue without a watch and see if there is a time that I really need it. Until then, I feel I just saved my family some money by not buying a new watch. This year I plan on having an even suntan without the watch line!

Breaded Chicken Tenders with Honey Mustard Dipping Sauce
Ingredients:
6-8 Chicken tenders
flour
salt & pepper
1 egg
1/2 cup milk
1/2 cup Panko Bread Crumbs
1/2 cup Seasoned Bread Crumbs
3 tbsp mayonnaise
1 tbsp Dijon Mustard
2 tbsp yellow mustard
2 tbsp honey
1 tsp lemon juice
Directions:
In three separate bowls, bowl #1 - flour and salt & pepper to taste, bowl #2 - beat egg & milk, bowl #3 - mis bread crumbs. Rinse chicken and then dip in bowl #1, #2, and #3. Bake chicken at 375 for 18-20 minutes.
Wisk together remaining ingredients for honey mustard dipping sauce!

After a long day at work for my husband and I, a day at preschool for my oldest son, and a day at grandma's for my youngest son, we walked into the house last night to the wonderful smell of fully cooked Beef Stew! How does a working mom of 2 young boys pull this off? Yes, my beloved Crock-Pot! I use my Crock-Pot at least once a week for a hot meal right when you get home. It takes some prep work the night before but it is so worth it after working eight hours and not having to cook! Let along grab take-out on the way home!
A Crock-Pot is great for Beef Stew, Pot Roast, Chili, Soups, and Chicken dinners. All is takes is a little prep work the night before to get all of the ingredients into the liner of the Crock-Pot. During the hustle and bustle of the morning, I take the stonewear liner out of the refrigerator, put it into the Crock-Pot and let it cook!
Now I have had a few mishaps on my perfectly planned dinners. Like the one when I had the corned beef all ready to go and in the Crock Pot while I left for work. To my surprise when I arrived home nine hours later, I did not smell the amazing scent of cooked corned beef. I found a Crock-Pot that I had forgotten to plug in and hence a large piece of meat that ended up in the garbage can.
Who invented this amazing appliance? Well it appears that Rival introduced their first Crock-Pot on 1971. It became an instant hit with housewives across America and Rival re-designed their Crock-Pot in 1974 to include the removable stonewear liner. After only 10 years, sales of the Crock-Pot rose to $30 million dollars.
The Crock-Pot is not as popular as it once was, however as more and more families are watching their budgets very tightly these days, I believe the Crock-Pot is once again gaining popularity! It is a very economical way to give your family a wonderful, healthy, hot meal!
Want an easy pot roast recipe? Place your roast in your Crock-Pot and pour one can of cream of mushroom soup over the roast. Then sprinkle one packet of onion soup mix on top. Let cook on low for 8 hours. Even better? Place carrots under the roast while it cooks, you will have delicious tender carrots and meat in a great gravy!

Broccoli with Cheese Sauce
Here is a super easy and delicious reicpe for cheese sauce that we love over broccoli!
Ingredients:
Broccoli (1 head or 1 bag frozen)
1 1/2 tbsp butter
1 1/2 tbsp flour
3/4 cup milk
1/2 tsp salt
1/2 tsp dry mustard
1/8 tsp paprika
6 slices of American Cheese
Directions:
Melt butter in sauce pan and stir in flour. Slowly add milk and heat on medium stirring constantly until it thickens. Add seasonings and reduce to medium-low heat. Add cheese and continue stirring until smooth. Serve over cooked and drained broccoli!

Save Time with Onion!
I was considered a "BIG" onion waster in my house. If a recipe called for a 1/2 a onion I would chop half and put the remaining half in a ziploc bag in the fridge uncut. Well it would sit there and eventually no longer be usable. So I made a committment, then whenever I had to cut an onion I would cut the WHOLE onion! The extra onion I put in a ziploc bag and place in the freezer. Now I have chopped onions whenever I need them. It is great when making a crockpot of chili or stew, just throw in your already chopped onion and save some time in the kitchen!!
Chicken Broccoli Bake - $5 Dinner Challenge
Ingredients:
2 chicken breasts cubed
1/2 cup onion
1 bag of frozen broccoli
1 can of cream of chicken soup
3/4 cup milk
1 1/2 cups shredded cheddar
1 2/3 cup hot water
1 box of Stove Top Stuffing
Recipe:
Brown cubed chicken in oil and onion, add salt and pepper to taste. Layer it on the bottom of 9x13 inch pan. Defrost broccoli and mix in with chicken. Mix soup, milk and cheese and then spread on top of chicken and broccoli. Mix stuffing mix with hot water and pour on top of the rest of the mixture. Bake at 350 for 30 minutes!
