Pasta with Cherry Tomatoes - Under $2 Garden Fresh Dinner

This is a great recipe when all those cherry tomatoes come in the garden!

Ingredients:
1/2# pasta
1-2 pints of cherry tomatoes
3 tbsp olive olive
1/2 onion, diced
1 clove of minced garlic
3 tbsp fresh chopped basil
salt & pepper to taste

Turn on pasta water to boil, wash and halve the cherry tomatoes.


Saute onion in olive oil in large skillet for a couple of minutes, add cherry tomatoes and garlic and let cook for 20 minutes, meanwhile cook the pasta.

Add the pasta directly from the boiling water and stir, top with basil and salt and pepper (sorry I took the last picture before the basil)!

Tomorrow's the day, its $1 Flip Flop day at Old Navy!  Who can pass up $1 flip flops?  I certainly cannot.  We are going to Thomas the Tank Engine in the morning so I hope I can still snag some after lunch!  Limit 5 per customer!

Dirty Laundry?


So a husband and two little boys seem to make A LOT of laundry. I tend to do most of my laundry on the weekend, but I also do a load here and there during the week if necessary. Especially since my 17 month old has 2 favorite little blankies (actually they are old burp clothes) that he keeps near and dear at all times. These can become a bit dirty and smelly and need a mid week wash!


We live in a colonial with all the bedrooms on the second floor. I thank the builder of this house often since he was kind enough to put the laundry room on the first floor and not in the basement. One flight of stairs with laundry and often a child in the other arm is torture enough on a Mom! We have had this laundry sorting system in place for about a year now and it works great. I bought 3 hampers for our closet. They were relatively inexpensive each under $10 a piece at Target. The point is that the laundry gets sorted now so it is quicker to grab a bin and go to the laundry room with it.

In our 3 bins we separate by whites, colors, and delicates. We also have an additional hamper in the bathroom for towels and then there is one in the baby’s room for all of his clothes. It makes it really easy once a hamper is filled to just take it down stairs and dump it in the washer to wash already sorted! However my one rule is that if an article of clothing has a stain on it, it goes directly to the laundry room so that I can pretreat it that night. I must say I love my Shout! Boys get all kinds of stains from spaghetti to grass!

My Most Tender BBQ Ribs with Sweet & Sassy BBQ Sauce

Here is a great summertime recipe that my family just loves. It takes a while to cook the ribs but the prep time is minimal. It is easy to do when you are at home for a lazy Sunday afternoon!

Ingredients:
2 slabs of pork baby back ribs
Lemon pepper
Parsley

Directions:
Places ribs in a large baking pan. Season the ribs on both sides with lemon pepper and parsley. Do not use salt, this close the pores. Add about an inch of water to the pan and cover with aluminum foil. Bake at 350 for 3 hours. Remove ribs from pan and place on grill. Baste with Sweet and Sassy BBQ sauce cooking about 10 minutes on each side. Enjoy!

Sweet & Sassy BBQ Sauce

Ingredients:
3 tbsp butter
1 medium onion finely chopped
¼ cup vinegar
1 tbsp lemon juice
1 cup ketchup
3 tbsp brown sugar
2 tsp dried mustard
2 tbsp Worcestershire sauce
¾ cup water
½ tsp salt
1 tbsp paprika
¼ tsp chili powder
1/8 tsp crushed dried red chili pepper

Directions:
Melt butter in sauce pan; add onion and sauté until tender. Add remaining ingredients and cook over low hear for 20 minutes stirring occasionally. Do not boil, makes 2 cups. I often double the recipe and freeze half in a Ziploc bag once cooled, saves time next time you make ribs!

So you know when you have all these plans and BAM you are struck down and nothing goes according to plan?  Well that is how my Sunday started when I woke up with a sore throat and then was stuck in bed for 2 days, luckily Dad stepped up and held down the fort while Mom was down and out.  I must say he did a great job and even managed to get some laundry in, way to go!  So here is our plan for the rest of the week, quick & easy items this week

Happy Mother's Day!

To all the mother's out there, I am wishing you a Happy Mother's Day.  My boys are my whole world and I cannot imagine life without them.  They make me laugh when I am sad, hug me when I need a hug, wake me up in the middle of the night when I would rather be sleeping, worry about them like crazy when they are sick, but most of all love me no matter what because I am their "Mama".

I thank God everyday for these most precious gifts.  I know there are days I would rather be something else than Mom, but in the end, I never want to be anywhere else but at home with my boys!  They grow up way to fast and sometimes I would like to freeze time, but then the next day something new and exicting happens with them.

When you have kids, you get to be a kid again.  You get to experience everything else through your children's eyes.  Who knew that I would be excited about going to the playground, the zoo, or to the Mall for lunch!  I see how much the little things matter to them and in the end they just want to spend time with Mom and I LOVE to spend time with them and sometimes wish other responsibilities don't get in the way of this precious time.

I pray for women who desperately want to share in the journey of motherhood, that the Lord may bless you with a child of your own.  Children are the most precious gift from God and I believe that everyone who wants to be a Mom should be able to be Mom!

Quick Turkey Sausage Jambalaya

Ingredients:
Package of Smoked Turkey Sausage (any type of smoked sausage or kielbasa would work)
1 tbsp vegetable oil
1 chopped green pepper
1/2 onion chopped
1 diced tomato (I used my frozen ones from the garden last year)
1 14.5 oz can of chicken broth
2 cups instant white rice

Directions:
Heat oil in soup pot, add sausage, onions and pepper and saute for 5 minutes.  Add broth and bring to a boil.  Add rice and stir, reduce heat, cover for 5 minutes.  Add tomatoes and cook for another 5 minutes!

My Coupon Organization Method

So before I became a “Coupon Fanatic”, I used those cute little accordion coupon organizers that you can buy for a $1. Well, as I began to really use coupons for almost everything, there just wasn’t enough space to hold all my coupons and the categories were limited. I explored some different options, but I wasn’t a fan of the binder method or the whole insert method at the time, I liked having all of my coupons cut and readily available in categories, so I made my own organization box. Yep, my coupon organizer is an empty baby wipe container. Don’t we all have tons of these lying around because we all think that we will find a use for them? Well mine works great for organizing my coupons!


I made my own separators by cutting up old file folders and then I printed out the labels on file folder labels. My coupon categories are as follows:

Now in my container, after I clip coupons I just leave them in the front to file. I also try to keep my rebate submission forms in the section labeled “rebates”. These categories work for my family, but you can create your own categories more tailored to your needs. I know there are a few I have had to modify.

My other method that I use is the store envelope method. I have an envelope in my purse labeled for the following stores for my weekly trips:

CVS
Walgreens
Rite Aid
Giant Eagle (GE)
Target
Marc’s

When I cut my coupons and plan my trips, I will put my list and all the needed coupons in each envelope. I also keep my Extra Care Bucks (ECB’s) in my CVS envelope, my Register Rewards (RR) in my Walgreens envelope, and my Target and GE store specific coupons in their respective envelopes. When I make my trips I only take in my envelope for that particular store. Now for Giant Eagle I usually have a larger list and hence more coupons, I will also sometimes take in my organizer just in case I find something that I may have a coupon for in my box.

Recently I have been experimenting with the whole insert method. I get double inserts because my Mom gives me her inserts. I am now only clipping one of the inserts of the coupons I know I will use, I then save the other inserts in case I need them. If I know a coupon was in the 4/25 Smart Source, I can easily pull that one out and clip it right there.

Make Your Own Foamy Handsoap

WOW - I just calculated that I will save about $57 a year because I found this easy recipe to make your own foamy handsoap.  Now for some reason my husband and I were very particular and we had to have Bath & Body Works Foam Hand Soap in our kitchen.  That is what we like best.  But last week I did a little experiment and it worked!

Using this recipe on Cutting Coupons in KC I found out that I could make my own foamy handsoap for almost nothing!  We had just finished the container of Bath & Body Works, so I made my own using Dawn Hand Renewal in the Bath & Body Works dispenser.  The best part is I just got 4 of these FREE from CVS with $1 off coupons!  I told NO ONE in my house and the new soap has been in use for over a week and no one has noticed a change, not even me!

So I figured out that we used one of these about every 3 weeks.  I normally buy these for 3 for $10, so over the course of the year, I will save over $57, sorry Bath & Body Works!  I just may replace all my soaps with this recipe!

Monthly Money Tip – Credit or Debit – Which is Better?

So if you read my blog, you know that I am in favor of using credit cards for the perks IF you can pay your balance every month AND you are living below your means. Well I found an interesting article in the May 2010 issue of Money on situations where it might be better to use Credit instead of Debit:
1. You’re Planning to Make a Major Purchase – Credit Cards offer the strongest protection on purchase disputes. If goods or services aren’t delivered as stated, the issuer will battle with the merchant on your behalf. Until the problem is resolved, the charge is suspended with no interest accrues. With a debit card, the money is gone from your account and you have to wrestle with the merchant to get your money back.

2. You’re Buying Gas, Checking in at a Hotel, or Renting a Car – When you debit for those transactions, the merchant figures out the maximum you could spend, and then puts a hold on your bank account for that amount. You cannot access the excess that is frozen until the transaction is finalized which can take up to 48 hours. When checking into a hotel for 3 nights, the merchant may freeze $1000 dollars; however your total bill may only be $600.
3. You Want Big Rewards – Many debit cards now have rewards programs, but they no way compare to the best credit card programs available. Many credit cards offer at least 1% cash back on purchases. If you spend $65 per week at the grocery store, over the course of the year you will spend $3380, but could get $33.80 in cash back rewards.
4. You Don’t Vigilantly Monitor Your Account – If your credit card is stolen, your liability is $50 maximum by law. If your debit card is stolen and money is used, the money is gone and you’ll have to jump through hoops to get it back. In the meantime you could end up spending more by bouncing checks or miss bill payments. If you do not have time to regularly check your bank account activity, use a credit card that way it’s the bank’s money that’s on the line and not yours!
