Birthday Cake Round Up


So today is my son's 4th Birthday Party. He requested a "pink" cake. So I gave in and made a strawberry cake with white icing. We also made chocolate Mickey Mouse heads and put them on the cake along with sprinkles! I am entering my cake over at the Birthday Cake Round Up on LifeasMom to win a set of Wilton UltraGold Bakeware. Wish me luck!!

Freezer Cooking Day - Part 2 (Meatballs)

So I had some more time to do some freezer cooking so I whipped up a batch of meatballs to freeze for meatball subs. My meatball recipe is:

1 lb ground beef
1/4 c. onion
3/4 c. seasoned bread crumbs
1 egg slightly beaten

Mix them all up and then shape into meatballs should yield about 24-27.  Bake at 350 for 20 minutes.  Once cooled, place in plastic bag and freeze!  These freeze for up to 6 months!

Eat From The Pantry - Week 4 THE END!


Overall I consider my family's experiment a great success! We had a nasty stomach bug in the house earlier this week which helped tremendously with us having to eat at home. Here is what we ate this week:

I am so excited. I plan to keep my rules up of only eating out 2 times per week and trying to keep my groceries under $65 a week, since I know I can do it!

Freezer Cooking Day - Part 1


So I am joining MoneySavingMom and LifeasMom in their Freezer Cooking Day (well weekend). I am trying to do what I can since I have my niece's birthday party today and my son's tomorrow. So I managed to score some BOGO Top Round so I made up some Fajita Kits!
I had 2 - 1 lb packs of Top Round, 2 Green Peppers, and 1 LARGE onion. I chopped the onion and green peppers up and put them in bags. I then sliced the meat and put it in smaller bags and placed the smaller bags in which the veggies. I will freeze these and defrost when I am ready to cook and use my McCormick Fajita Seasoning and some tortillas!



So I managed to made 2 dinners for a very low cost:
Top Round - $4.70 for 2 packs
Peppers - $2.32
Onion - $0.98
Total of - $8.00 or $4 per meal!

Eat From The Pantry - Week 1 Results





So every week, I will be reporting my results of my 4 week challenge. I also am awarding points for my dinners. For each item I use out of my freezer or pantry for dinner I get one point. Each dinner will have a total number of points and a total amount of points earned for the week. My guidelines that I am following are posted here. Please keep in mind that my husband and I both work full-time and we have 2 children ages 4 & 1, our life is a bit hectic!


On the upside, I am really proud of my family this week. We exceeded our goals by only eating out once and staying under the $20 grocery budget. I am amazed and my pantry and freezer are already looking more barren. Now I am a bit low on meat and I know Giant Eagle is having a BOGO meat sale, so we will see how I do on the grocery budget next week. All in all Week One was a SUCCESS!!!

Eat From The Pantry - The Pantry!


So our challenge began on Sunday, January 3rd! I decided to take stock in my pantry and here is how is looked before we began...

Pretty full huh? Well I started digging and look what I found...

Yep - 9 BOXES OF BETTY CROCKER POTATOES!!! I did not realize I had some in the back of my pantry and I went a little crazy when Target had them on sale for $0.79 plus I had $0.35 coupons. I mean what kind of bargain hunter would pass up a side dish for $0.44?? Not me!! We'll see if we can eat at least a box a week.

Happy New Year


Happy New Year! 2009 was a great year for my family and I am so looking forward to 2010. Who knew that couponing and finding great deals would be so much fun. I am challenging myself this year to really apply the principles I learned in 2009 and save some major $$$ in 2010. Today is my last day before my family starts the Eat From The Pantry Challenge. I am so excited and am already planning our menus. I will post weekly updates as well as my "scoring system" I am going to use!!
