Cinnamon Roll Cookies

1 cup butter, softened
1 3/4 cup sugar
3 egg yolks
1 Tbsp honey
1 tsp. vanilla extract
2 1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
1 Tbsp ground cinnamon

In a large bowl, cream butter and 1 1/4 cups sugar until light and fluffy.  Beat in egg yolk, honey, and vanilla.  Add flour, baking powder, and salt gradually and mix well.

In a separate bowl combine 1/2 cup sugar and cinnamon (or I simply used my Pampered Chef Sweet Cinnamon Sprinkle).  Shape a heaping tablespoonful of dough into a 6" log and roll in cinnamon sugar mixture.  Loosely coil the log and place on baking sheet.

Bake for 250 for 8 - 10 minutes.  Remove to wire racks to cool.
